Recipe for Homemade Plum Wine

Traditionally, we are used to wine made from grapes. At the worst - from apples. But Asian sages know that it is the plum that gives wisdom, health and longevity. In the article we describe how to make plum wine at home using a simple recipe.

Selection and preparation of plums

Start preparing wine, of course, it is necessary to prepare the material for it. We will need over-ripe plums falling from the tree and slightly sun-dying. The main sign of readiness will be the slightly wrinkled skin of the stem.

The most difficult in the preparation of wine from plums at home is considered to squeeze the juice. It's all about pectin, which binds the juice and makes it very thick. Therefore, the juice is obtained in this way:

  1. It is necessary to grind all the berries in a large bowl to a puree-like appearance. Mashed potatoes should be thoroughly grinded.
  2. Then you need to pour water in a ratio of 1 to 1.
  3. The resulting mixture is left alone for several days, after covering the container with a clean cloth.
  4. Fermentation should take place at a temperature of 20-25 ° C.
  5. Stir the mixture regularly after 8-10 hours.
After 3 days it is necessary to drain the liquid, and the resulting pulp - strain and squeeze the juice out of it. This procedure is best carried out in the press. But you can do it manually.

Combine the juice with the drained liquid. Now you need to add sugar. Norm of sugar:

  • for semi-sweet (semi-dry) - 300 g per 1 liter of juice;
  • for sweet - 350 g;
  • for dry - about 200 g

Stir the sugar and pour the wine material into the fermentation tank. Now everything is ready for fermentation.

Important! Juice must fill the container no more than ¾.

Fermentation

Fermentation tank filled with syrup. Now it is necessary to seal everything with a hydraulic lock. If it is not there, a regular rubber glove with a puncture on one of the fingers will do.

The water seal can be made from a tube, part of which is lowered into the vessel, and partly into a jar of water. Then the carbon dioxide will be free to leave, and the air will not get into the vessel. Place the jar with bragi in a warm dark place. The optimum temperature for fermentation is 23-25 ​​° C. Maturation

Storage conditions

Matured wine is bottled and stored in a cellar or a cool dark place. It is stored for about 5 years in such conditions.

When can I drink wine

We will need:

  • plums - 10 kg;
  • water - 8 l;
  • sugar - 1.5 kg;
  • raisins - 2 kg.

This is a very simple recipe for making plum wine. For it you need:

  • plums - 8 kg;
  • pure water - 1 l;
  • granulated sugar - 1 kg.

Clean the plums from dirt, but do not wash them. Pound the berries and cover with warm water. Cover the plums with a cloth and put on for several days. Stir regularly.

  • sugar - 0.4 kg;
  • alcohol - 0.3 l;
  • water - 2 l.

Remove bones from plums. Prepare a syrup from 1 cup of sugar and 1 liter of water. Boil the syrup and pour it into the berries. Close and wrap the blanket. After 8-10 hours the syrup can be poured. From the remaining water and sugar, make a syrup again. Repeat the procedure with the plums, and pour the resulting syrup into the same bowl as the first portion of the syrup.
