Ingredients

In order to prepare pickle pickles for the winter in 10 half-liter jars, we need:

  • cucumbers - 3 kg;
  • tomatoes - 1.5 kg;
  • Bulgarian pepper - 5 pieces;
  • onions - 1 kg;
  • carrots - 1 kg;
  • pearl barley - 0.5 kg;
  • vegetable oil - 400 ml;
  • water - 1 l;
  • salt - 2 tbsp. l;
  • sugar - 2 tbsp. l;
  • ground black pepper - 1 tbsp. l;
  • vinegar 9% -100 ml.

Kitchenware:

  • deep saucepan or saucepan;
  • cutting board;
  • knife;
  • blender;
  • grater;
  • 10 cans of 0.5 l;

Step-by-step recipe

First of all, rinse thoroughly in several waters and boil pearl barley. Barley should be soft and razvararoy. A pound of barley we fill with 1 liter of water and cook until ready.

Important! There are recipes in which they use raw cereals, but believe me - it will be much tastier if you pre-cook the porridge.

  1. While our pearl barley boils, prepare the vegetables. Rinse well under running water. Then proceed to cutting. Cucumbers cut into cubes. Onions cleaned, finely chop. We clean the carrots and rub them on a large scale. Bulgarian pepper must be cut into strips.
  2. We make cross-shaped cuts on tomatoes and place them in boiling water for 1 minute. This is necessary in order to easily remove the skin, which we absolutely do not need. We take out tomatoes and wash them with cold water, after which we clean them. Then cut the tomatoes into 4 parts and place in a blender, grind until smooth. If you do not have a blender on hand, you can make tomato puree using a meat grinder.
  3. When all the ingredients are prepared and sliced, proceed to cooking. To do this, heat the vegetable oil in a saucepan or a large saucepan and add onions. Fry it, stirring constantly for 5-7 minutes until transparent, and send grated carrots after it. Stir vegetables, fry for a few minutes.
  4. Then add sliced ​​Bulgarian pepper to the roasted vegetables and mix well again. Leave to extinguish for 5-7 minutes.
  5. The next pickles are pickled cucumbers, pearl barley and tomato. All ingredients are thoroughly mixed and leave to stew under a lid on low heat for an hour.
  6. While preparing our pickle, we will sterilize the jars. You can do it quickly and easily using the oven or microwave. In the first case, my jars and wet set neck down on a baking tray, previously covered with a towel. Place in the oven, preheated to 120 degrees, and leave for 15 minutes. In order to disinfect the jars in the microwave, they pour a little water in them so that the bottom is covered for 1.5-2 cm, they set the power to 800-900 Kv and include for 3-4 minutes. This time is enough for the banks to become sterile with the help of steam.
  7. Approximately in half an hour we add salt, pepper and sugar to our pearl-barley mixture. Stir, cover with a lid and continue to simmer.
  8. A few minutes before being ready, pour vinegar into the pan.
  9. An hour later, our preparation is ready, you can lay it in jars. Carefully fill the sterile container with pickle and roll the jars with the key.

Important! Banks with dressing need to turn and wrap for a day, and then stored in a dark cool place.
That's all - a delicious pickle with barley for the winter rolled into the banks and sent to wait in the wings.
