However, this does not mean at all that you should deny yourself the realization of more exotic options, for example, making jam with ginger. Inventory and kitchen appliances

  • Casserole 6 l - 2 pcs. (one for boiling gooseberries, and the second for expressed juice).
  • Colander.
  • Banks for rolling up the juice.
  • Spoon for stirring during cooking.

Ingredients Required

  • Black gooseberry - 6 kg.
  • Water - 0.5 l.
  • Sugar - about 1.8 kg (in the calculation of 600 g per 1 liter of the juice obtained).
  • Ginger - 1 tsp

Step-by-step recipe

The sequence of execution of all actions in this case is as follows:

  • First, clean and moved gooseberries need to pour into a six-liter saucepan and pour half a liter of water;
  • then the gooseberry container should be placed on the stove and, waiting for the boil, reduce the heat, close the lid and cook for 40 minutes;

Important! At this stage, the power of the fire must be below average, otherwise the future jam will simply float.

  • after the specified time, allow the gooseberry to cool and strain it through gauze folded in several layers or a bag of cotton fabric, previously placed in a container of the same volume (if possible, the selected fabric should be as tight as possible in order to limit the penetration of boiled fruit parts into the juice) ;
  • when all the juice is drained, add sugar (600 g per 1 l) to it and bring it to a boil over low heat, stirring constantly until sugar is completely dissolved;
  • now you can make more fire (somewhere up to the middle of its allowable strength) and continue to make jam until fully prepared, stirring it regularly (it can burn);
  • after 2.5 hours, add a spoonful of ginger, mix everything well again and leave on the stove for another 10 minutes.

Now it remains only to pour ready-made jam into sterilized jars and roll up. When hot, it will still be watery, but after standing for a while it will become more viscous and thick. If you want it to be very dense, then add a little more sugar and boil for a long time.

Many housewives cook gooseberry jam just chopping the fruit, not getting rid of the seeds and small black tails, but this decision is not like everyone. Therefore, we offer you another recipe - based on juice.

Inventory and kitchen appliances

  • Juicer.
  • Two deep bowls (one for the whole gooseberry, the second for its juice).
  • Saucepan for making jam.
  • Ladle.
  • Spoon for stirring.
  • Properly prepared cans for rolling the finished product.

Ingredients Required

  • Gooseberry - how much to eat.
  • Sugar - the amount is determined on the basis of the resulting juice (for 1 liter of juice should be 1 kg of sugar).

Step-by-step recipe

The procedure for making jam according to this recipe is somewhat different from the previous ones, which is largely due to the need to use a juicer:

  • peeled and sifted gooseberries need to be thrown three times through a juicer (the second and third times pass the cake);
  • ready juice is better to additionally strain through gauze, since even the best device can miss fruit seeds;
  • Fully cleaned gooseberry liquid is poured into a larger container and add as much sugar as the juice turned out (you need to mix slowly, gradually adding a sweet product);
  • stir the sugar should be almost to complete its dissolution, after which the bowl with the future jam should be moved to the stove and bring to a boil over low heat;
  • as soon as the slurry boils, collect foam from it and continue stirring the juice so that it does not burn;
  • until the jam comes to readiness on a very slow fire, you can do the preparation of cans and lids for rolling the finished product: boil the lids, and heat the cans in the oven.

Important! Foam from the surface of the juice should be removed during the whole cooking process, even if it appears very little in subsequent times.

It is possible to pour only absolutely juice-jam along the banks, and they should be rolled up after it is completely cooled, and the next day it is possible (at night the containers are simply covered with lids).
