  1. It is recommended to take the following varieties: "Hungarian Italian", "Green green", "Green Altana", "Late prunes" and others - the main thing is that they have a bone separated.
  2. You need only ripened fruits without damage. They must be divided by size and washed. Large - halved and clean the bone, small can be used entirely.
  3. To make the whole fruit well saturated with sugar, they are blanched, heated in soda solution. After that, small cracks form on the skin of the fruit, and sweetness comes through them.
  4. How much sugar to put in a drink depends on the variety of plums. Sweeter fruits need less of it, and for sour fruits you need up to 400 g of sugar per liter. By the way, sometimes sugar is replaced with honey.

Compote plum with pits

Ingredients (6 l):

  • plums - 3 kg;
  • water - 1.5 l;
  • baking soda - 7 g;
  • sugar - 900 g

Cooking:

  1. Wash the fruit, remove the stem.
  2. Fill the pot with water, let it boil. Make the fire smaller and add soda.
  3. Send the fruit to the pot; heat them until small cracks form on the peel (this is the very process of blanching).
  4. Throw the fruit in a colander, wash it. Put in jars, pre-sterilized.
  5. Boil syrup from water with sugar. Add it to the fruit.
  6. Cover the jars and put them in a container with hot water for 15 minutes. 5 minutes is enough for sour fruits.
  7. Roll up the glass containers, turn them over so that the bottom is on top. Wrap in something warm and cool.
Important! Pick the fruits with a needle in two or three places and then they will not burst in the process of rolling.

Compote from plums without stones

Ingredients (6 l):

  • plum - 3 kg;
  • water - 1.5 l;
  • sugar - 750 g

Cooking:

  1. Fruit wash, remove the stalk. Cut the fruit into two halves and pull out the bones.
  2. Wash soda cans thoroughly, rinse them in hot water. Calcify in the oven or hold over the steam. Wash and boil the lids.
  3. Dip fruits into glass containers.
  4. Fill the pot with water, add sugar and boil the syrup. Pour it into plums. Cover the jars.
  5. Dip the glass containers into the pan with hot water so that it does not touch the tops of the cans by 2-3 cm.
  6. As boils, pasteurize the jars (0.5 L - 15 minutes, 1 L - 25).
  7. Banks roll up. Turn them over, warm. Let them cool.

Compote from plum with honey

Ingredients (5 l):

  • plums - 3 kg;
  • water - 1.5 l;
  • honey - 1 kg.

Cooking:

  1. Remove the stalk, wash the plums and put in a bowl.
  2. Boil water with honey. Add this syrup to the fruit. Let infuse day.
  3. Drain the syrup; put the plums in the jars (do not forget to sterilize them).
  4. Let the syrup boil, pour it into the fruit.
  5. Sterilize the jars in hot water for 5 minutes after it boils.
  6. Roll up glass containers, turn over, cover with something warm. Let cool.

Plum compote with wine

Ingredients (5 l):

  • plums - 3 kg;
  • water - 0.75 l;
  • red grape wine - 0.75 l;
  • sugar - 750 g;
  • Clove - 2 pcs .;
  • Cinnamon and vanilla - to taste.

Cooking:

  1. Wash the fruit, get rid of the stalks.
  2. Cut them into two halves, remove the bones. Tamp in sterile jars.
  3. Fill the pot with water, pour wine, sugar and spices into it. Make a syrup. Add it to the fruit.
  4. Cover the jars with lids, sterilize them 10 minutes from the moment of boiling.
  5. Roll up, flip. Warm, let them so cool.

Did you know? Delicious prunes come not from any variety of plums. The most suitable for this plum-Hungarian (they are blue-dark, oval). By the way, they helped the residents of Sochi in 1910 during the time of cholera. Plum compote without sterilization

Ingredients (4 l):

  • plums - 1.5 kg;
  • sugar - 1.5-2 cups;
  • water - 2.5 l.

Cooking:

  1. Wash the fruit, get rid of the stalks.
  2. Put the fruit in sterile jars, filling them to 1/3. Pour boiling water and wait 15 minutes. Cover them with holes.
  3. Let the water cool down; Pour it into the pot, add sugar. Send to the fire - let it boil.
  4. Syrup pour the fruit to the top of the jar.
  5. Roll up, flip, warm. Let cool.
Dry plum at home.

Compote plums, apples and currants

Ingredients (6 l):

  • water - 4-4.5 liters;
  • lemon balm or mint - 2 twigs;
  • sugar - 1-1,5 glasses;
  • red currant - 200 g;
  • apples - 2 pcs .;
  • plums - 300 g

Cooking:

  1. Boil water, add lemon balm and mint there - they will bring an unusual taste. Add sugar (if you like sweeter compotes, then its amount should be increased).
  2. Wash fruits, remove bones from plums, cut apples into small slices.
  3. Put fruit in boiling water for 10 minutes.
  4. Pour hot compote into sterilized cans, trying to distribute fruit evenly.
  5. After covering with lids (without rolling up), lower the glass containers into a wide saucepan with water so that it does not reach the tops of the cans - let them be sterilized for 10 minutes.
  6. Roll up the banks, reassure them warm and let them cool.
Important! Conservation must be kept in a dark place so that it is cool.
